One of the oldest foods known, olives were first cultivated in Crete some five to seven thousand years ago. While olives have a high fat content, almost three-fourths of their fat is the healthy monounsaturated type, which offers cholesterol-lowering properties. Olives are also a good source of vitamin E (which helps to neutralize free radicals), iron, copper and dietary fiber.
Try Tofu Provencal for a festive dish featuring olives.

Hello Dr. Weil,
I love your work. You have great insight. About 3 years ago I moved to a factory town. Apparently There have been several hundred pounds of mercury that have been emitted annually on a recent report from an independent newspaper. Finally legislation passed tougher emission laws in New York which put restrictions on the cement factory not even a quarter of a mile away. Before I moved here I lived in the country and I noticed a significant decrease in my mental health. I have been finding it very tough to focus or concentrate. When I am practicing meditation I notice a strangle "mental dizziness" within. I try and focus all of my efforts into concentrating on one particular thing and I have great difficulty even for a few seconds without my mind wandering. Sometimes it takes me a while to regain my recognizing that I lost concentration. I don't believe in ADD medication. I feel that this may have something to do with the factory near by. Unfortunately I can't seem to move out of the area because of money circumstances. I took your suggestions about having plants in the home, this seemed to increase my well being by some degree. I also take multi-Vitamins daily along with 1,000 milligrams of Vitamin C daily. I also take Ginkgo Biloba daily along with fish oil supplements. I also do Yoga when I have extra time. My only down fall is that I drink 2 cups of coffee daily. One with my breakfast and one in the afternoon. Do you know of anything else that would help me? I thank you for you time. I am in deep gratitude for you reading this letter. I feel like I don't know where else to turn.
