Why Cauliflower Should Be On Your Grocery List

Part of the cruciferous vegetable group, cauliflower is a refrigerator must-have. It is rich in antioxidants, notably indole-3-carbinol (I-3-C), which research indicates may help protect against cancers and heart disease. It’s also inexpensive; a good source of vitamins C and K, fiber and folic acid; low in calories and versatile. Eat it raw, steamed, baked, roasted or pureed to make creamy sauces and thicken soups.

If cauliflower (and other cruciferous vegetables) causes you to have gas, try eating yogurt, kefir, or buttermilk regularly (or take probiotic supplements) to boost the friendly bacteria in your colon. You might also try adding lemon juice to your meals, and limiting high-fat foods. These simple steps can reduce bloating and discomfort and help the stomach to empty faster, allowing gas-producing compounds to move more readily into the small intestine.

Nice colors on your cauliflower! And I agree, cauliflower is both delicious and good for your health. An other good thing is that you can get it all year round - at least in Sweden.

Cauliflower is one of my favorite veggies! Raw, steamed, in stir-fries, cauliflower mash. The only thing is that it makes me super bloated but it's worth it!

I am hypothyroid and have read that I should limit my intake of cruciferous vegetables. How often/how much would you recommend?

Favorite Roasted Cauliflower:

1 lg. head of Caulif. cut into 1/4" slices
2-3 Tbsp olive oil
1-3 cloves of garlic, micro-planed into oil
arrange caulif. onto baking sheet (in one layer) mix the garlic and oil together, drizzle it onto the caulif. Massage the oil/garlic mixture into the caulif. , sprinkle with salt. roast in a 400*oven for ~30 min. (or untill fork tender) I can eat the entire head without gas!!

I like to use cauliflower wherever someone else might use white potatoes - around a roast organic chicken with onions, carrots, and asparagus...in soup, etc. It has a similar taste and consistency, but many more health benefits, in my opinion. I've been meaning to try mashed cauliflower, as a mashed potato substitute, but haven't gotten around to it yet!
